Roasted Cabbage Salad

Serves: 4   |   Meals:


  • 1 medium-sized red cabbage, cut into 1 inch slices
  • 1 tbsp olive oil
  • salt & pepper
  • 1/2 cup sour cream
  • 1 tbsp lemon juice
  • 1 tbsp horseradish
  • dill for garnish (optional)


  1. Preheat oven to 400ºF
  2. Brush cabbage slices with olive oil on both sides and lay on baking sheet.
  3. Season with salt and pepper
  4. Roast for 20 minutes or until cabbage is cooked through and slightly crisp / browned on some edges
  5. Mix together sour cream, lemon juice and horseradish. Season to taste with salt and pepper
  6. Lay slices of cabbage on plate and drizzle with sour cream dressing
  7. Sprinkle with dill garnish (optional)
