Roasted Cabbage Salad
Ingredients
- 1 medium-sized red cabbage, cut into 1 inch slices
- 1 tbsp olive oil
- salt & pepper
- 1/2 cup sour cream
- 1 tbsp lemon juice
- 1 tbsp horseradish
- dill for garnish (optional)
Directions
- Preheat oven to 400ºF
- Brush cabbage slices with olive oil on both sides and lay on baking sheet.
- Season with salt and pepper
- Roast for 20 minutes or until cabbage is cooked through and slightly crisp / browned on some edges
- Mix together sour cream, lemon juice and horseradish. Season to taste with salt and pepper
- Lay slices of cabbage on plate and drizzle with sour cream dressing
- Sprinkle with dill garnish (optional)
